What do I do with this huge creepy beet?

Had this GORGEOUS red rose waiting for me when I got home. That guy I married grew it himself!

Remember when I talked about the community garden plot that I turned down? Well, Aaron went ahead with the idea and is apparently growing roses and beets for some reason.

This morning I opened our refrigerator to see the biggest fucking beet on the planet taking up half of a shelf. Something about it’s HUGE body, sprawling leaves, and spindly roots coming at me creeped me out. I shared this info with my darling freaking husband, and this morning I open the fridge to find it STARING AT ME!

And all before my morning coffee. The bastard.

Okay, so now we have this creepy beet in our fridge. What should we do with it? I don’t even like beets, but Aaron says you can eat the leaves? I’m dubious.

  1. I think beets taste like bad dirt. I’ve never tried the greens, but they ARE totally edible–I just assume they’re going to taste beet-y.
    To me, the only value of beets is as a dye. Or a horrifying fridge puppet, apparently.

  2. I LOVE that guy you married! Hilarious beet attack! Totally wash the hell outta the leaves, stirfry em with some animal you DO eat and a few other veggies and you are in beet greens heaven…even Aaron might try it…erm what is he growing that he actually eats might I ask??? Xx

  3. I love the googly eyes! I need to buy more of those things.
    I used to think that I dislike beets, but I actually only dislike the jarred, pickled beets. Unprocessed beets are very different. I sometimes dice them or matchstick them and toss them into a stir fry or fried rice, and they function a lot like carrots. Or I will cube them and cube a few sweet potatoes or other root vegetables, toss them in olive oil with whatever seasonings sound good and roast them flat on a baking sheet.
    The leaves are in the kale/chard category rather than in the salad greens category.

    The leaves taste more like spinach than beets. I used to hate beets, I thought they tasted like sweet dirt, but my taste buds went and did a change up on me and now I really like them.
    Chop up that freaky beet with some potatoes, toss them in oil, salt and pepper and roast them in the oven, so yummy.
    My other fav is spicy sausage and beet soup, there are so many things you can do to that beet.

  6. The leaves are awesome tasting! I don’t like beets unless they’re in my smoothie, but the leaves sauteed with some olive oil and sea salt??….*wipes up the copious drool*
